Tasting with the Fat Duck staff

The LEOS team, along with Charles Spence from Oxford, welcomed the Fat Duck front of house team  for a special workshop on flavour perception. Eleven experiments in a row, unlocking the mysteries of sweetness enhancement, thermal tastes, smells of colours, sounds of temperature and other multisensory interactions that are involved (or should be involved !) in creating the most surprising dishes.
