LEOS @ CENSES, UNIVERSITY OF LONDON
The London Experimental Oenology Seminars (LEOS) are a recent offspring of CenSes (Centre for the Study of the Senses).
They aim at bringing together oenologists, wine-professionals and academics to focus on specific aspects of wine-tasting and flavour experience. The monthly seminar will be organised around a tutored wine-tasting. In recent years, many innovative ways of measuring and understanding the perception of wine have been developed and the seminar and tasting will draw on them to address specific puzzles or controversies in oenology – like the role of expertise, language, olfaction, analytic tasting, preferences, texture-perception, temperature, grape maturity, oak, etc. in determining our complex flavour experience of wine.
